It was Friday late afternoon. I was working from home. It was a fairly busy day and when I looked at the clock it was already past 5 PM. It had been snowing for about an hour now and I checked outside and saw about 2-3 inches on the ground, creating that white wonderland. However, it was getting dark and that took away from the beauty outside. I got out of my chair and switched on the lights. She had gone to work and I was alone. What shall I do – eat peanuts for whiling away the time? In my native language – there is a saying ‘kalle-kai thinnakaa-gattha?’ . Yes, literally, go and eat groundnuts if you want to laze away time. So I thought, ‘Why not’? I had made roasted peanuts in the past and gave it a whirl. Here is how I did it – of course, the recipe is from my wife.
Take a cup or two of peanuts in a Pyrex container. It is better if it is split and has the skins already removed. Add a spoon of water and 2 table spoons of cooking oil. Add a teaspoon of salt and a teaspoon of chili powder. You can get chili powder in an Indian grocery store. Then mix it well – this ensures the peanuts are coated with oil and the spice. Also add a dash of lemon juice. Then microwave it for about 3 minutes. The bowl becomes very hot! You got to let it cool for 3-4 minutes, mix it well and microwave it again for another 3-4 minutes. Again make sure you cool it. Try this cycle till you start smelling the roasted peanuts. Don’t expect the peanuts to be crisp out of the microwave – they will be on the softer side, but use the color as an indicator.
Let it cool down completely. That is when it becomes crisper and you are ready to spend some time either watching the gorgeous snow coming down if there is still daylight or one of those episodes of ‘West Wing’ as I did. Enjoy!
